Quick Chilled Lima Bean Soup

No pot, no pan, no problem! All you need to make this easy soup is a high speed blender and a few key ingredients. The lima bean base offers many functional nutritional components such as insoluble fiber, folate, magnesium and iron. To complement the lima bean base, we use vitamin rich tomato juice and stimulating curry. Perfect for a warm summer evening, this is a favorite of our California based BõKU office.

3 cups Tomato Juice
2 cups Plain Almond or Soy Yogurt
10 oz. packaged Frozen Lima Beans
1 tsp Curry Powder
1/4 cup BõKU Super Food

In the container of a Vita-Mix or other high-speed blender place the tomato juice, yogurt, frozen lima beans, curry powder and Boku. Blend until smooth and check for seasoning.
